The old man knew about the creatures and about sarah who escaped before. He was either crazy and just wanted to keep them away by feeding them like the first person said OR he was trying to protect people. When sarah escaped she ran right into the authorities who sent a whole other group down into the mine to die. But by getting rid of the evidence aka the girl who escaped in 2 he ensured it would not happen again, and nobody would go back down cause this time they'll expect everyone to be dead and hopefully learn a lesson. That or the directors realized they needed a change.
